I'm a little surprised that no one mentioned Lee Valley 2002 Cabinetmakers glue. It's a tan color and dries to a light brown.
It has a very high solids content and dries harder than any other glue I've tried, on par with hide glue. It also stays on the surface and doesn't soak into the wood like some, and when I've forgotten to get all the squeeze-out before it dries, it's glass-hard and chips off like hide glue. So, except for very light color woods that will be visible, I find it perfect. All the best qualities of hide glue and the open time of PVA. Outside of hide glue, its my 'go to' for instruments and other woodworking projects.

Interesting I have never heard of the Lee Valley stuff. Perhaps not many luthiers are using it so we don't hear about it in these circles. Is it an AR glue and does it clean up nicely with water?

Bottle says PVA emulsion with 45% solids (solids are 1 micron). easy clean-up with water. Dries really hard, so there's no cold creep. I have no idea what the 'solids' are.
