For me they matter most on small instruments, because my wrist rests on the edge at a 45 degree angle so the bevel provides a nice flat surface versus a sharp edge digging into my tendons. On larger instruments it's the more muscly part of my forearm resting on the edge so it's less of an issue.

No idea what effect they have on tone. But I hate the look of most bevels, cutting into the soundboard and putting the bridge closer to one side than the other. With careful design you can restore the feeling of balance. http://www.luthiersforum.com/forum/viewtopic.php?p=647385#p647385
