Thanks for posting the video!
FWIW - lutes orient the grain of the braces opposite of what guitars do. IIRC Fred Carlson oriented his built up braces with flatsawn grain to the soundboard.
For my guitars I orient the grain conventionally for the most part, and avoid any with "runout".
