I've seen that headstock concept done before, but I can't recall when or where I saw it.

I think his work process order is bad. He should have laminated the body strips before cutting out and sanding the shape.

You could:

Laminate strips
Glue into a block
Saw out shape rough
Cut strips the other way
Laminate those.
Glue back together
Rout shape with pattern.

I don't see any way around cutting the glued up strips at least once. Laminating and gluing trapezoids would be a nightmare.

Any thoughts on the scarf joint being a narrow angle in the neck?
