looking for a ballpark answer.

How many shellac flakes (lbs.)can I expect to use for one guitar (french polished). I bought 1/4lb bag. I also realize that the variables are endless. Maybe a better question is what is the least amount of flakes that have been used for a guitar?

Yeah, that seems about right Jim. I know it always amazes me at how little you really need. Then again, you're just using 5-6 drops at a time when bodying... A little goes a long way, that's for sure!

I just finished FP on a 0 sized Martin clone and used about 1/2 of a 6 fl. oz. container. This included the wash coats for pumicing and sealing the top edges prior to routing for the binding. A little does go a long way.
