Yup.
Because of the way it's loaded the tension of the strings actually pulls it tighter. As long as there's enough area on either side of the V to take up the remaining shear loads it will hold fine. I've used V joins as a repair technique when the head is broken off somewhere up in the middle and the break is not clean enough to simply glue back together. I've even used V-joins on 12 strings. Stay within normal proportions any you'll be fine.
