I have not built a guitar with macassar yet, but I can tell you from some turning work that I have lacquered that I have finished two pieces side by side, one epoxy "filled" and the other not.

The epoxy filled piece looked much "wetter" and glossier than the un filled piece. The finish had a much deeper look.

Neither showed the small pores though.

I use macassar quite a bit for headstock veneers. I have always filled them using epoxy. I tried it without filling and had quite a few pores showing. It is not a very big piece to deal with so a couple of drops of epoxy usually does it.

Never done a back and side set though.

If a wood has pores, you have to fill them one way or another if you don't want them showing. Macassar has pores, albeit small ones.
