If I were to start over purchasing tools, I would have your supplier thickness the back and sides for you to a specific dimension. For such a small price (maybe free) it beats the $800-1,000 out lay for a sander you don't use much as a hobby builder. Hand planing is pretty hard and labourous with some of the dense tonewoods.
I would get a good hand plane (LV or LN) and plane the tops. I have hand planed many tops and find it quite enjoyable. This will also allow you the builder to control thickness and sound of your top rather than having someone thickness it to a specific dimension.
The use of a thickness caliper (there are plans for self made ones around) and some practice with your plane you can make a beautiful instrument.
