I learned restringing from Frank at Frets.com and always do it as he does.

Did you notice the half-hitch flip of the string over the tuner shaft? That takes up the slack much quicker than I can turn my winder. I like it. (looking around the place for something to restring)

Yeah, I stretch a bit, or simply run through tuning three times and that gets pretty close too. Nothing like a new set of strings when they've had enough.

I often think of the story in Fretboard Journal where the guy bought an old Gibson, took the strings off and soaked them in solvent, then put them back on for a Nashville recording session. Now that's being conservative I'd say....
