I am an architect, and I have designed many public schools. When we lay out the woodworking shop areas we always make room for a couple of left handed benches when there is a total of 15 benches or so in the room. School workbenches up here are smaller versions of the traditional Scandinavian bench type, and have the "dog leg" front vise which make the right handed versions quite cumbersome for left handed people. With other types of benches it might not be such a big issue.

I'm left handed and have learned to adapt to a right handed world. Arnt's suggestion about the bench is good. I've had no problems using stationary tools as a lefty, but some handheld power tools are a pain. Skil saw type saw, for example, if you use it left handed, all the chips/sawdust are thrown directly into your face.    They actually make a left handed "skil saw", but I didn't know that until I'd learned to use the one I have. A lathe also has limitations if you're left handed.
