It is real alright, I have seen this many times. It is an ocy's only real defence other than a parrot like beak but for them to attempt to use that would be suicide against a large predator as it is at the very base of their head so they would need to commit themselves 100% to an attack.

The transformation of the complete colour change can be almost instantaneous. I have seen them moving across different coloured reef, rocks and weed quite literally changing as they go. The only real give-away being the smooth shape of the bulbous head not quite fitting in with the sharper edges of weed and coral. But you need to be close with a keen eye to pick it.

As you will see in the vid, the normal strategy is to eject ink to blanket an escape. Then they will quickly propel off for a short distance and change colour to match the new hide out, most effective.

Squid are a little different insomuch that they will simply disappear right before your eyes in clear water. When you first see them they will be a brownish tan colour. When startled, they eject their ink to cloud the water and become as transparent as a sheet of glass as they propel off at speed.

What an amazing planet.

Nuts. Completely nuts.

One of my favorite things to do when I go surfing (about once every few
months) is to go put my board up on the shore, then swim out to float in
the water since the salt and wetsuit make me so buoyant. It's heavenly
for all of thirty seconds until I start thinking about giant squids, jelly-fish,
sharks, and snakes. Gives me the creeps     

That's really cool though. I can't imagine being a diver, looking at a rock
that turns out to be some freaky giant squid or something.

Is octopus ink an irritant?

Not at all James, in fact squid or octopus ink is delicious when mixed into semolina and eggs to make "black spaghetti", try googling that phrase and you will see it is quite a treat.
