Does everybody use a certain binding thickness "as in wood" or does it matter? I have some purple heart I plan on using and I know it will be hard to bend the thicker it is.

There is now requirement as to thick/thinness so feel free to experiment. Use whatever looks right to you.

So far, I've bent mine at the thickness they came from the supplier.

Many people, especially if they're using purfling too, trim the binding to match the side thickness.

I use .080 thickness. Personally, I like the binding a bit thicker, plus it gives some margin of safety with regards to sanding the sides too thin, etc.   But I've seen .050 used very successfully if you rout your channels to a fairly tight binding fit.

I've used up to .125" on a large jumbo, right down to .060" on a recently done small bodied steel string.
As a general rule I cut easy to bend bindings thicker than i need. Cranky wood like Ebony & Bloodwood needs to be a lot thinner, especially if the bends are going to be tight.
Most of the pre-made bindings I've bought are about .085" Most woods bend easily at this thickness.
