Michael;
I shoot for a 10mm high saddle with frets and a 3-3.5mm
string height at the 12th fret.

That means the bridge is 8mm tall and the saddle sits 2mm above the bridge.
I use a 12 or 18 hole bridge -they both give a great string angle to the saddle and leave room for lowering the string height when the guitar gets older and the top and neck have lifted a bit.

Michael,

I shoot for a 5mm gap under the straightedge.

ISTM that a 1.5 mm difference is a lot.  Where is that made up? Or, is that just a difference in setup, and when everything comes together, i.e. fingerboard tapered on bass side, frets leveled, etc., it just comes out with good action.  This from someone who has never done it, either bolt on or Spanish.

I do the same as Mike but 11mm and 3.5mm at 12th. I also use a shim at fret 1... can't recall the height. Same as a fret basically.

Michael,
Using a dovetail neck joint on a classical seems like a lot extra and potentially frustrating work.
Any particular reason you are going this route? Just curious.
