I was waiting for others to answer first as my building style is very "eclectic". As the others said a lot depends on the wood for the top and the bracing pattern etc you are going to use. Todd's numbers are pretty good ones. My tops were Sapele and Cuban mahogany and were around 0.12" in the centre where the bridge is tapering out to around 0.09-0.1" at the rim edges.
As Todd says the soundhole area is where you need to think about the bracing. Mind you the soundhole sinking raises the action which can be a good thing with Weisses and you control the intonation via the slide bar. As long as they don't implode they will ususally growl nicely.
