I arch but have done it both ways. I don't think it really makes a difference.

I arch all but the upper transvers brace and upper transvers graft.

At present I am working on an Om that I am arching the bridge plate and concaving the bottom of the bridge. I usally don't, but it just seemed to me that by nature the bridge plate was flatting the the dome, and by adding the convex radius to the bridge plate and concave radius to the bridge would help reduce some of the sheer load on the bridge while maintaining the true dome shape.
