Guys,

Just wondering how deep the cuts into the X braces should be to join
together if they're about .700 tall. Thanks.

Ross, in theory .350, half of the depth of each member...

I actually don't measure for a lap joint like that. I mark and cut the first
one at what looks like half the height, and make the cut on the brace
from the top first. Then, I line up the bottoms of the two braces and use
the bottom of the first cut to mark the other brace. Cut from the bottom
of the other brace to that mark.

If I've reconstructed this correctly in my mind, that should ensure that the
lap joint has the bottom of each brace perfectly flush. Ergo, this method
also works with braces that are not the same height. (I'll rough my braces
out, join them, and then plane the taller one down to meet the top of the
shorter one, glue a cap on (per suggestions here), and then carve.

DISCLAIMER: Mind you, this all comes from someone who's first acoustic
guitar is still in unassembled pieces on his workbench! But, I have done
quite a bit of furniture building, so I'm comfortable talking about joinery
in general.

That is exactly how I did it...although darn if I could have worded it as well. And it fit very tight. It never dawned on me to just to half/half.

Yep! It is, after all just a half-lap joint that happens to be on a slight angle...in fact, the angle is harder to execute than the "lap" itself!

I cut mine half way plus a hair on the table saw, setting the mitre gauge to the correct angle. Couldnt be easier.
