i wanna leave the color of my guitar natural to the wood, could i poly coat it or something like that to give a clear coat but at the same time give it protection?

you can coat that thing in finger paint if you want to and its not going to affect the sound at all.

Different finishes do not noticeably affect the sound of electric guitars, within reason. If you want to use poly, feel free.
