Can any of you electronic wizards explain to me how these might work? I have a good basic understanding of how humbuckers work in general but not ones with 6 conductors. I have one that I need to wire into a guitar that is not your run of the mill guitar, it's one of those Jerry Garcia Wolf guitars and he wants the mid pickup replaced and the new JBE one to be coil tapped. I cannot even find the color codes on line though I think I managed to figure it out.

But it would help if someone could explain what goes on under the hood with these pickups.

There are wiring diagrams on the page you linked. Looks like the pickups have some redundant wiring built in.

YEah I see the diagram but I didn't see a color code or how it works. I think I may have figured it out though and it's interesting. Looks like each coil is tapped somewhere in the middle of the winds such that when you use the tapped out coils you use them together so that they are still hum cancelling.

Looks like a typical phase swap arrangement but their diagram isn't very good... Be nice if it actually showed the wires from the pickups to the switches in proper fashion.

Yeah exactly!

I got the guitar all wired up and it sounds good. I really am a huge fan of JBE pickups.

Both coils are tapped. So you have the humbucker mode which is the full winding on each coil, and the “single coil” mode which is less windings on each coil.
