I cut it a little too thin. I'm using grover short post tuners. Will this still hold up or should I add a thin piece to add thickness?

Structurally you're fine. So if the tuners fit, go for it.

If you don't like the look, or need more thickness for the tuners, add a headplate.

A headstock overlay is always an easy fix.

Or if you are still too thin a back strap veneer! That is what I had to do when I slipped in a drum sander.
