Has anyone used a different wood for the sides and the back? For example, Honduran Mahogany sides, EIR back? I am not planning this or anything, just wonder if anyone has because I am sure there would be some good looking guitars if using the right combinations.

Richard Schneider built his Kasha-style classics with redwood tops AND backs, with Brazilian sides. He called it a second soundboard. I've met him, and talked to others who knew him well, and he was, indeed, a genius. I've also heard one of his instruments--incredible sound! If he said it works, I'm convinced.

I've got a couple of sets of western larch that I got from LMI a few years back (I think they had processed a tree for Martin to use as alternative tops, and after building a few, Martin decided they didn't like them), and I've got a plan to mate one with an orphan set of walnut sides and a sitka top. Larch is a (hard, stiff) softwood, but I think mating mahogany with EIR might be very interesting, sound-wise. Go for it! It's the kind of stuff the big boys just don't do.

What absolutely incredible inspiration!!

I have read of at least one classical luthier (female, btw) who specializes in three piece tops, spruce-cedar-spruce and the reverse. It is supposed to produce some, of the qualities of each material. I've not heard one so I can't say.
