Birds such as the Bluejay use structural color. There are tiny air bubbles imbedded in their feathers that create needed diffraction patterns to create a blue color. As for the blue shark, I have no idea. Perhaps Craig would know.

Fender used to have guitars made out of wood that was dyed while it was growing. It made really cool looking guitars. I think it was called Wildwood, which makes it pretty hard to find on Google. Don't know if they had blue. I believe that they used beech.
