My plane of choice for jointing guitar plates is a Stanley #5 1/2, I think it has just the right combination of length and heft for this task. I have said it before; if for nothing else, I would use a hand plane for this job because it is so fast. My skill with hand planes is average at best, and the jointing of plates is one of the easier things I do with planes, so if you haven't tried it, don't be intimidated with the idea that this is difficult; it's not! You do have to know the basics of planing and know how to tune a plane, that's it.
