The process is called espalier. A tree is forced to grow in a particular shape by using wedges, strategic splits and grafts to create ornamental shapes.

It was originally done with Fruit trees like Apple, pear and fig trees which pliable when young and graft easily. It appears that 4 of the pictures above are in the fig family (ficus xxx). Egyptians were the first to espalier fig trees to get them to grow closely parallel to a wall.

It is relatively easy to get trees to grow that way and can be very decorative. I have some that are much more elaborate than those but they are all very cool.
