how much does the size of the bridge and the thickness effect the tone of the guitar. Can anyone reccomend a book that talks about the science of tone for the guitar, (bracing thickness etc)

A lot. It's very stiff, very heavy, and right in the centre of all the action. It is something to pay a lot of attention to. I suggest trying a few different bridges on the same guitar and judging the changes in sound.
