I did a couple of rosettes which contained ebony recently and have another onr to do, I had a hell of a time eith the dust from the ebony rosette and bindings getting into the top, I was wondering if there is a simple method for preventing this or cleaning the top after, I wondered if it would be worth giving the top a thin seal coat of shellac before I start ?

Bob, you need to get building again! All that knowledge is starting to seep out. Patch those neural holes and get buildin'!

The shellac is the trick, a little shellac also helps the prevent small dings. doesnt eliminate the possibility but helps

i am assuming that you are refering to the dust from leveling the rosette with the top; easy solution is to use a scraper; voila, no dust only shavings.
