I have some violin knives with no handles. Just a rectangular length of steel with a sharpened end - with no holes drilled in the shank to pin the shank to the handle. How would you attach a handle to this? I'm thinking just cut a suitable piece of wood in half, carve out a recess to accept the shank, and epoxy everything together.

Is that the way to go, or am I missing some better way to do this?

I think the blade needs to be removable for sharpening.

This month's "Shopnotes" magazine:

http://www.shopnotes.com/main/sn83-toc.html

has an article that might help.

I'd recommend getting a subscription to "Shopnotes". They seem to always have plans for something I need. You should really check out the article that Monty mentioned. It may be a bit more complicated than you want to tackle for this kind of knife but the design is very nice. Drop me a PM if you don't have access to the article.Don A38633.9660648148

The idea I found most interesting is the use of set screws, instead of glue, to anchor the blade in the handle. It's then removable.
