Has anyone ever thought or used stainless for the nut or saddle?

Never tried it, but I think that I would avoid stainless for the saddle simply due to the increase in weight over bone.

The question I would ask myself would be :

"What do I hope to gain?"

People have used brass nuts and bridge saddles (& other metals) in the electric world, and the effect is always one of making the sound more "metallic" which often translates to "bright". In the case of acoustic guitars, aren't we trying to avoid that?
Really good hard materials are available to acoustic builders that add warmth without harshness. You can go "too far" in the quest for hard materials.

    Stainless other than being very diffficult to shape without a surface crinder or other machine shop tools isn't going to make you happy.
   The material is add more weight and mass than you would like not to mention you will destroy your strings in a short time.
   Bone is the way to go .
