I'm building my first archtop with two humbuckers, three-way selector switch and separate volume and tone pots. How does one tie down all the wiring runs so that they aren't vibrating or flopping around inside the body?

You can get really small zip ties. If you tie wires together and take up slack carefully, you can get rid of all the wobbles without having to stitch anything down.
