Sounds good on the demos although they are a bit pricey. Wonder if you can adjust the top of the saddle for intonation, looks like they only have one version for nylon and steel strings.

Here's part of the fitment info I received this morning. Doesn't look like they want you to mess with the top of the saddle too much.

SOLOIST SADDLE PICKUPS ORDERING SPECS:
There are separate models and specs for steel string and nylon string.

Soloist Steel String Saddles are 1/8" compensated saddles and require a 1/8" (3.1mm) saddle slot. Steel string saddles are available in three stock heights - low, medium and tall. They are fitted to height by shimming up from the closest lower height stock Soloist saddle
It is also possible to remove material from the bottom of med and tall height saddles. However, the simplest (and recommended) method of setting up a Soloist saddle is to use a stock Soloist height shorter your existing saddle and shim the lower height Soloist saddle up as needed. This also makes it easy to make any further tweeks to the setup as may be needed.
Steel string saddles are 1/8" or 3.1mm thick
Stock steel string 6 string saddle heights are:
Low E Hi E
Low - .240" (6.09mm) .210" (5.334mm)
Med - .300" ( 7.62mm) .270" (6.85mm)
Tall- .350" ( 8.89mm) .320" (8.12mm)

There are two general string spacing formats;
Standard - 2.125" E to E ( good up to up to apx. 2.225")
Wide - 2.250 E to E (good up to apx 2.375").
Standard radius is 16" (12" also available)
The steel string saddle lengths are - 2.7" /standard string spacing format, and 2.862" /wide string spacing format.
A 7 string version for steel string is available on special order.

and yes, Pricey!

I've installed a few. They are great for what they do and yes you're not supposed to mess with the top of the saddle.

The nylon pickup they make is really great too. I have one customer who's had one in his main gigging guitar forn2 years now with no complaints and all positive reviews so far.

You say the steel string saddles are already compensated so I'm guessing that would be similar to the top of a stock Martin saddle? I can't tell from the photos. But if that was the case then it should work fine for most guitars.
