Sorry it's taken me so long to respond, Beth. I couldn't remember for sure what that angle was, and I kept forgetting to check it for you. Anyway, it's 10 degrees. But, you know, it's really not an exact science. It just needs to be an approximation of the appropriate angle to get the strings to push the saddle down into the slot with minimal forward pull toward the front of the slot.
As for your question about method, I would think you could do it the way you suggest, but it's hard for me to say what would work well for you with the jig you already have. You just have to think through the geometry of it and then try it and see how it works. Good luck!
